  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cayenne pepper (optional)
  • 4 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 2 (15-ounce) cans great northern beans, rinsed and drained
  • 1 (4-ounce) can diced green chilies, undrained
  • 1/2 cup sour cream or Greek yogurt
  • 1/4 cup chopped cilantro, for garnish
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and bell pepper and cook for another 2 minutes.
  2. Stir in cumin, chili powder, and cayenne pepper (if using). Cook for 1 minute more, stirring constantly.
  3. Pour in chicken broth and bring to a simmer. Add shredded chicken, great northern beans, and diced green chilies.
  4. Reduce heat to low and simmer for at least 15 minutes, or up to 30 minutes, to allow the flavors to meld.
  5. Remove from heat and stir in sour cream or Greek yogurt. Season with salt and pepper to taste.
  6. Garnish with chopped cilantro and serve hot.
