Vegan Banana Bread with Cinnamon Crunch Topping

This vegan banana bread is incredibly moist and flavorful, topped with a delicious cinnamon crunch for added sweetness and texture. It’s the perfect treat for breakfast, brunch, or a sweet snack!

  • 3 ripe bananas, mashed
  • 1/3 cup vegetable oil
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon apple cider vinegar
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • For the Cinnamon Crunch Topping:
  • 2 tablespoons all-purpose flour
  • 2 tablespoons brown sugar
  • 1/4 teaspoon ground cinnamon
  • 2 tablespoons vegan butter, cold and cubed

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a large bowl, mash the bananas well. Add the oil, sugar, vanilla extract, and apple cider vinegar. Mix until combined.
  3. In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  5. Prepare the topping: In a small bowl, combine the flour, brown sugar, and cinnamon. Cut in the cold vegan butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  6. Pour the batter into the prepared loaf pan and sprinkle the cinnamon crunch topping evenly over the batter.
  7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

For an extra nutty flavor, add 1/2 cup of chopped walnuts or pecans to the batter.
