Ingredients

  • 1 tablespoon olive oil
  • 1 yellow onion, chopped
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 teaspoon turmeric powder
  • 1/2 teaspoon ground black pepper
  • 8 cups chicken broth
  • 1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 cup cooked rice (white or brown)
  • 1/2 cup chopped fresh cilantro
  • Salt to taste
  • Lemon wedges, for serving (optional)

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, carrots, and celery and cook until softened, about 5-7 minutes.
  2. Add garlic, ginger, turmeric, and black pepper and cook for 1 minute more, stirring constantly.
  3. Pour in chicken broth and bring to a boil. Add chicken and reduce heat to a simmer. Cook until chicken is cooked through, about 15-20 minutes.
  4. Stir in cooked rice and cilantro. Season with salt to taste.
  5. Serve hot, with lemon wedges if desired.

Notes

For an extra creamy soup, add a splash of coconut milk at the end. You can also add other vegetables like spinach or kale.
