  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 teaspoon turmeric powder
  • 1 teaspoon chili powder
  • 1 teaspoon cumin powder
  • 1/2 teaspoon garam masala
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 (15 ounce) can tomato sauce
  • 1 cup heavy cream
  • 1/2 cup butter, unsalted
  • 2 tablespoons chopped fresh cilantro, for garnish
  • Salt and pepper to taste
  • Cooked rice or naan bread, for serving

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add chicken cubes and cook until browned on all sides and cooked through. Remove chicken from the skillet and set aside.
  2. In the same skillet, add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and grated ginger and cook for another minute until fragrant.
  3. Stir in turmeric powder, chili powder, cumin powder, garam masala, and cayenne pepper (if using). Cook for 30 seconds, stirring constantly.
  4. Pour in the tomato sauce and bring to a simmer. Reduce heat to low and let it simmer for 10 minutes, stirring occasionally.
  5. Stir in the heavy cream and butter until the butter is melted and the sauce is smooth. Season with salt and pepper to taste.
  6. Add the cooked chicken back into the skillet and stir to coat with the sauce. Simmer for another 5 minutes, allowing the chicken to absorb the flavors.
  7. Garnish with chopped fresh cilantro.
  8. Serve hot over cooked rice or with naan bread.

Notes

For an extra layer of flavor, try adding a squeeze of lemon juice to the skillet right before serving. Serve with a side of raita (yogurt sauce) for a cooling contrast.
