Sweet Chili Chicken Bowl

This Sweet Chili Chicken Bowl is a quick and easy meal packed with flavor! Tender chicken is coated in a sweet and spicy chili sauce and served over a bed of rice with your favorite toppings.

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1/4 cup cornstarch
  • 2 tablespoons olive oil
  • 1/2 cup sweet chili sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1/2 teaspoon garlic powder
  • Cooked rice, for serving
  • Optional toppings: shredded carrots, sliced green onions, sesame seeds, chopped peanuts

Instructions

  1. In a medium bowl, toss the chicken cubes with cornstarch until evenly coated.
  2. Heat olive oil in a large skillet or wok over medium-high heat.
  3. Add the chicken and cook until browned and cooked through, about 5-7 minutes.
  4. In a small bowl, whisk together sweet chili sauce, soy sauce, rice vinegar, sesame oil, and garlic powder.
  5. Pour the sauce over the chicken and cook for 1-2 minutes, or until the sauce has thickened slightly.
  6. Serve the chicken over cooked rice.
  7. Top with your favorite toppings, such as shredded carrots, sliced green onions, sesame seeds, and chopped peanuts.

Notes

For extra flavor, marinate the chicken in the sweet chili sauce mixture for at least 30 minutes before cooking. You can also add a pinch of red pepper flakes for more heat.
