Stuffed Lamb Gyro with a Tomato, Cucumber, Feta, and Kalamata Olive Salad

For the Meatballs:
* 1 pound ground lamb
* 1 egg
* 1/2 c. breadcrumbs
* 3 T. fresh dill, finely chopped
* 6 T. olive oil, separated
* 1 t. pepper
* 1 t. salt
* 1/2 t. garlic powder
* 1 t. oregano, separated
* 1/4 Vidalia onion, finely chopped
* 1 garlic clove, crushed

For the Peppers and Onions:
* 2 red bell peppers, sliced
* 3/4 Vidallia onion, sliced
* 2 T. olive oil

For the Tzatziki:
* 2 c. plain Greek style yogurt
* 1/4 c. lemon juice
* 1 clove garlic, crushed
* 1/4 c. Vidalia onion, minced
* 1 t. salt
* 1 t. pepper
* 1/4 c. fresh dill, chopped
* 1/4 English cucumber, finely chopped

For the Salad:
* 1 English cucumber, peeled and diced
* 2 vine ripened tomatoes, seeded and diced
* 1 c. kalamata olives, halved
* 1/2 c. feta cheese (optional)
* 1/4 c. red wine vinegar
* 1/4 c. olive oil
* 1 t. pepper
* 1/2 t. salt

* 4 gyro pita flatbreads
* 8 leaves Romaine lettuce, chopped

Directions:
1.Preheat oven to 400 degrees.
2.Toss peppers and onions in oil, salt, and pepper and place on a baking sheet. Bake for 30-40 minutes.
3. Heat 2 tablespoons of oil over medium heat. Add in onions. Let them cook for 5 minutes.
4. Add in garlic and cook just until onions are translucent. Remove from heat.
3. Combine all meatball ingredients (sautéed onions and garlic too) in a bowl and mix well.
5. Heat 4 tablespoons of oil over medium heat.
6. Roll meatballs, about 1 1/2 inches in diameter and place in pan. Cover and cook for about 8-10 minutes, shake the pan. Flip the meatballs over, cover, and cook until bottom is medium to dark brown, about 8 more minutes. Remove from heat.
7. For the salad: Combine all salad ingredients in a bowl and mix well. Set aside to marinate.
8. For the tzatziki: Combine all ingredients in a bowl. Mix well. Set aside.
9. Assemble sandwiches: Heat flatbreads in microwave for 30 seconds. Smash 4-5 meatballs onto each flatbread. Add lettuce, peppers and onions, and some tzatziki. Serve alongside the tomato, cucumber, feta, kalamata olive salad.
