Delicious Strawberry Shortcake Cake

This Strawberry Shortcake Cake is a delightful twist on the classic dessert. Layers of moist cake, fresh strawberries, and whipped cream create a show-stopping treat perfect for any occasion.

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, cold and cut into pieces
  • 3/4 cup milk
  • 1 teaspoon vanilla extract
  • 1 pint fresh strawberries, hulled and sliced
  • 2 cups heavy whipping cream
  • 1/4 cup powdered sugar

Instructions

  1. Preheat oven to 375°F (190°C). Grease and flour a 9-inch round cake pan.
  2. In a large bowl, whisk together flour, granulated sugar, baking powder, and salt.
  3. Cut in cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  4. Stir in milk and vanilla extract until just combined. Do not overmix.
  5. Pour batter into prepared cake pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
  7. While the cake is cooling, prepare the strawberries.
  8. In a large bowl, whip heavy cream and powdered sugar until stiff peaks form.
  9. Once the cake is completely cool, slice it in half horizontally.
  10. Spread half of the whipped cream over the bottom layer of the cake.
  11. Arrange sliced strawberries over the whipped cream.
  12. Top with the second layer of cake and spread the remaining whipped cream over the top.
  13. Garnish with additional sliced strawberries, if desired.

Notes

For an extra burst of flavor, macerate the sliced strawberries with a tablespoon of sugar for about 30 minutes before assembling the cake.
