This Spicy Black Bean Soup is packed with flavor and perfect for a chilly evening. It’s a healthy and satisfying meal that’s easy to make.

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 jalapeño, seeded and minced (optional)
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon smoked paprika
  • 4 cups vegetable broth
  • 2 (15-ounce) cans black beans, rinsed and drained
  • 1 lime, juiced
  • Salt and pepper to taste
  • Optional toppings: sour cream, cilantro, avocado, tortilla chips

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic, red bell pepper, and jalapeño (if using) and cook for another 3 minutes.
  2. Stir in cumin, chili powder, and smoked paprika. Cook for 1 minute more.
  3. Add vegetable broth and black beans to the pot. Bring to a boil, then reduce heat and simmer for 15 minutes.
  4. Use an immersion blender to partially blend the soup, leaving some beans whole for texture. Alternatively, you can transfer about 2 cups of the soup to a blender and blend until smooth, then return it to the pot.
  5. Stir in lime juice, salt, and pepper. Taste and adjust seasonings as needed.
  6. Serve hot, topped with your favorite toppings such as sour cream, cilantro, avocado, or tortilla chips.

Notes

For a creamier soup, blend all of the soup until smooth. You can also add a dollop of plain Greek yogurt instead of sour cream.
