This Soft Apple Cake is a comforting and easy-to-make dessert, perfect for enjoying with a cup of coffee or tea. Its moist texture and sweet apple flavor make it an irresistible treat.

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup (1 stick) unsalted butter, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup sour cream or plain yogurt
  • 2 medium apples, peeled, cored, and diced
  • Optional: Cinnamon sugar for topping

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a separate large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the sour cream or yogurt, beginning and ending with the dry ingredients. Mix until just combined.
  6. Gently fold in the diced apples.
  7. Pour the batter into the prepared cake pan and spread evenly.
  8. If desired, sprinkle the top with cinnamon sugar.
  9. Bake for 35-40 minutes, or until a wooden skewer inserted into the center comes out clean.
  10. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream for an extra indulgent treat.
