Ingredients

  • 1 pound Italian sausage, removed from casings
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 large sweet potato, peeled and diced
  • 6 cups chicken broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • 4 cups chopped kale
  • Salt and pepper to taste
  • Grated Parmesan cheese, for serving (optional)

Instructions

  1. In a large pot or Dutch oven, brown the sausage over medium-high heat. Crumble with a spoon as it cooks. Drain off any excess grease.
  2. Add the onion and garlic to the pot and cook until softened, about 5 minutes.
  3. Add the sweet potato, chicken broth, diced tomatoes, oregano, and red pepper flakes (if using). Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the sweet potato is tender.
  4. Stir in the kale and cook until wilted, about 5 minutes.
  5. Season with salt and pepper to taste.
  6. Serve hot, topped with grated Parmesan cheese, if desired.

Notes

For a vegetarian option, substitute the sausage with 1 (15-ounce) can of cannellini beans, drained and rinsed. Add the beans along with the kale.
