This Roasted Garlic White Chicken Pizza is a flavorful and satisfying alternative to traditional tomato-sauce pizzas. The creamy white sauce, tender chicken, and sweet roasted garlic create a delicious and easy-to-make weeknight meal.

  • 1 head of garlic
  • 2 tablespoons olive oil, divided
  • 1 pound pizza dough, store-bought or homemade
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup heavy cream
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cooked chicken, shredded
  • 1/2 cup mozzarella cheese, shredded
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat oven to 400°F (200°C). Cut the top off the head of garlic, drizzle with 1 tablespoon of olive oil, wrap in foil, and roast for 45-60 minutes, or until soft and golden.
  2. Let garlic cool slightly, then squeeze out the roasted garlic cloves into a small bowl. Mash with a fork.
  3. Increase oven temperature to 450°F (232°C).
  4. On a lightly floured surface, roll out the pizza dough to your desired shape and thickness.
  5. In a medium bowl, combine ricotta cheese, Parmesan cheese, heavy cream, salt, and pepper.
  6. Spread the ricotta mixture evenly over the pizza dough, leaving a small border for the crust.
  7. Sprinkle the mashed roasted garlic over the ricotta mixture.
  8. Top with shredded chicken and mozzarella cheese.
  9. Drizzle the remaining 1 tablespoon of olive oil over the pizza.
  10. Bake for 12-15 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
  11. Garnish with fresh parsley before serving.

Notes

For an extra touch of flavor, add some sautéed spinach or caramelized onions to the pizza before baking.
