Delicious Pile of Roasted Carrots

These roasted carrots are a simple and delicious side dish. Roasting brings out their natural sweetness, making them a flavorful addition to any meal.

  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh thyme leaves (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, toss carrots with olive oil, salt, and pepper.
  3. Spread carrots in a single layer on a baking sheet.
  4. Roast for 20-25 minutes, or until carrots are tender and slightly caramelized, flipping halfway through.
  5. Garnish with fresh thyme leaves, if desired, and serve immediately.
