  • 1 1/2 cups granulated sugar
  • 1 cup canned pumpkin puree
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • For the Cream Cheese Filling:
  • 4 ounces cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 large egg yolk
  • 1/2 teaspoon vanilla extract
  • For the Streusel Topping:
  • 1/2 cup all-purpose flour
  • 1/4 cup packed brown sugar
  • 1/4 cup cold unsalted butter, cut into cubes
  • 1/4 cup chopped pecans (optional)

Instructions

  1. Prepare the Streusel Topping: In a medium bowl, combine the flour, brown sugar, and cold butter. Use a pastry blender or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs. Stir in the pecans, if using. Set aside.
  2. Prepare the Cream Cheese Filling: In a small bowl, beat together the softened cream cheese and granulated sugar until smooth. Beat in the egg yolk and vanilla extract until well combined. Set aside.
  3. Prepare the Muffin Batter: Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners.
  4. In a large bowl, whisk together the flour, baking soda, cinnamon, nutmeg, cloves, and salt.
  5. In a separate bowl, whisk together the sugar, pumpkin puree, vegetable oil, eggs, and vanilla extract.
  6. Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
  7. Assemble and Bake the Muffins: Fill each muffin liner about halfway with batter. Spoon about 1 tablespoon of cream cheese filling into the center of each muffin. Top with the remaining batter, dividing it evenly among the muffins.
  8. Sprinkle the streusel topping evenly over the muffins.
  9. Bake for 20-25 minutes, or until a wooden skewer inserted into the center comes out clean.
  10. Let the muffins cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

For a richer flavor, try using brown butter in the streusel topping. Simply melt the butter and cook until it turns a nutty brown color. Let it cool slightly before using.
