  • 6 slices of bread (challah, brioche, or Texas toast work well)
  • 1 cup milk
  • 1/2 cup pumpkin puree
  • 2 large eggs
  • 2 tablespoons granulated sugar
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons butter, for cooking
  • Maple syrup, for serving
  • Powdered sugar, for serving (optional)

Instructions

  1. In a shallow dish, whisk together the milk, pumpkin puree, eggs, sugar, pumpkin pie spice, and vanilla extract until well combined.
  2. Heat a large skillet or griddle over medium heat. Add 1 tablespoon of butter to the skillet and let it melt.
  3. Dip each slice of bread into the pumpkin mixture, ensuring both sides are coated. Allow excess mixture to drip off.
  4. Place the soaked bread slices onto the hot skillet and cook for 2-3 minutes per side, or until golden brown and cooked through.
  5. Repeat with the remaining butter and bread slices.
  6. Serve immediately with maple syrup and a dusting of powdered sugar, if desired.

Notes

For an extra touch of flavor, try adding a pinch of cinnamon or nutmeg to the pumpkin mixture. You can also top the French toast with whipped cream and chopped pecans for a decadent treat.
