These Pumpkin French Toast Roll-Ups are a fun and easy breakfast treat! They’re filled with a creamy pumpkin spice mixture, dipped in French toast batter, and cooked to golden perfection.

  • 1/2 cup pumpkin puree
  • 2 tablespoons cream cheese, softened
  • 2 tablespoons brown sugar
  • 1/2 teaspoon pumpkin pie spice
  • 8 slices white bread, crusts removed
  • 2 eggs
  • 1/4 cup milk
  • 1/4 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 2 tablespoons butter
  • Maple syrup, for serving
  • Powdered sugar, for serving (optional)

Instructions

  1. In a small bowl, combine pumpkin puree, cream cheese, brown sugar, and pumpkin pie spice. Mix until smooth.
  2. Flatten each slice of bread with a rolling pin.
  3. Spread about 1 tablespoon of the pumpkin mixture evenly over each slice of bread.
  4. Roll up each slice tightly and secure with a toothpick.
  5. In a shallow dish, whisk together eggs, milk, vanilla extract, and cinnamon.
  6. Melt butter in a large skillet over medium heat.
  7. Dip each roll-up into the egg mixture, coating all sides.
  8. Place roll-ups in the skillet and cook for 2-3 minutes per side, or until golden brown.
  9. Remove toothpicks and serve immediately with maple syrup and powdered sugar (optional).

Notes

Dust with powdered sugar or add a sprinkle of cinnamon after cooking for extra flavor and presentation.
