Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1/2 cup pumpkin puree
  • 1/4 cup milk
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • Vegetable oil, for frying
  • 1/2 cup granulated sugar, for coating
  • 1 teaspoon ground cinnamon, for coating

Instructions

  1. In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  2. In a separate bowl, whisk together the granulated sugar, brown sugar, pumpkin puree, milk, melted butter, and vanilla extract.
  3. Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
  4. Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
  5. Drop rounded teaspoons of batter into the hot oil, a few at a time.
  6. Fry for 2-3 minutes, or until golden brown, turning occasionally to ensure even cooking.
  7. Remove the donut holes from the oil and place them on a paper towel-lined plate to drain.
  8. In a small bowl, combine the granulated sugar and cinnamon for coating.
  9. While the donut holes are still warm, toss them in the cinnamon sugar mixture to coat evenly.
  10. Serve immediately and enjoy!

Notes

For a richer flavor, try adding a pinch of ground cloves or ginger to the batter. You can also drizzle with a simple glaze made from powdered sugar and milk.
