  • 1 1/2 cups graham cracker crumbs
  • 5 tablespoons unsalted butter, melted
  • 1/4 cup granulated sugar
  • For the Cheesecake Filling:
  • 16 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup pumpkin puree
  • 2 large eggs
  • 2 tablespoons all-purpose flour
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • For the Topping (Optional):
  • Whipped cream
  • Sprinkle of pumpkin pie spice

Instructions

  1. Prepare the Crust: Preheat oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Press mixture firmly into the bottom of a 9×13 inch baking pan.
  2. Bake the Crust: Bake the crust for 8-10 minutes, or until lightly golden. Let cool slightly.
  3. Prepare the Cheesecake Filling: In a large bowl, beat cream cheese and sugar until smooth and creamy.
  4. Add Remaining Ingredients: Beat in pumpkin puree until combined. Add eggs one at a time, mixing well after each addition. Stir in flour, vanilla extract, and pumpkin pie spice until just combined.
  5. Pour and Bake: Pour the cheesecake filling over the prepared crust. Spread evenly.
  6. Bake: Bake for 30-35 minutes, or until the center is just set.
  7. Cool and Chill: Let the cheesecake bars cool completely in the pan, then cover and refrigerate for at least 2 hours before cutting into squares.
  8. Serve: Cut into bars and serve with whipped cream and a sprinkle of pumpkin pie spice, if desired.

Notes

For a richer flavor, use brown sugar instead of granulated sugar in the crust. Store leftover cheesecake bars in the refrigerator.
