Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup pumpkin puree

For the Brown Butter Maple Glaze:

  • 1/4 cup unsalted butter
  • 2 cups powdered sugar
  • 3-4 tablespoons maple syrup
  • 1/4 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a large bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
  3. In a separate bowl, combine the granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Beat until well combined.
  4. Add the pumpkin puree to the wet ingredients and mix until smooth.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  8. To make the Brown Butter Maple Glaze:

  9. In a light-colored saucepan, melt the butter over medium heat. Continue to cook, swirling occasionally, until the butter turns golden brown and has a nutty aroma, about 5-7 minutes. Remove from heat and let cool slightly.
  10. In a medium bowl, whisk together the browned butter, powdered sugar, maple syrup, vanilla extract, and salt until smooth. Add more maple syrup for desired consistency.
  11. Drizzle the glaze over the cooled pumpkin bread. Let the glaze set before slicing and serving.

Notes

For an extra nutty flavor, toast the walnuts and sprinkle on top of the glaze.
