  • 1 cup pumpkin puree

  • For the Frosting:
  • 4 ounces cream cheese, softened
  • 1/2 cup (1 stick) unsalted butter, softened
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2-3 tablespoons milk

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 13×9 inch baking pan.
  2. In a large bowl, whisk together the flour, baking soda, cinnamon, nutmeg, cloves, and salt.
  3. In a separate bowl, combine the sugar, pumpkin puree, oil, eggs, and vanilla extract. Mix well.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  5. Pour the batter into the prepared baking pan and spread evenly.
  6. Bake for 25-30 minutes, or until a wooden skewer inserted into the center comes out clean.
  7. Let the bars cool completely in the pan before frosting.
  8. For the Frosting: In a large bowl, beat together the cream cheese and butter until smooth and creamy.
  9. Gradually add the powdered sugar, mixing until combined.
  10. Stir in the vanilla extract and milk until the frosting reaches your desired consistency.
  11. Spread the frosting evenly over the cooled pumpkin bars.
  12. Cut into squares and serve.

Notes

For a richer flavor, add 1/2 cup of chopped walnuts or pecans to the batter. Store frosted bars in the refrigerator.
