Bowl of Potato Soup

This creamy and comforting potato soup is the perfect easy weeknight meal. Made with simple ingredients, it’s a guaranteed crowd-pleaser.

  • 4 medium potatoes, peeled and cubed
  • 1 medium onion, chopped
  • 4 cups chicken broth
  • 1 cup milk
  • 1/2 cup heavy cream
  • 1/4 cup butter
  • 2 tablespoons all-purpose flour
  • Salt and pepper to taste
  • Optional toppings: shredded cheddar cheese, crumbled bacon, sour cream, chopped chives

Instructions

  1. In a large pot or Dutch oven, melt butter over medium heat. Add onion and cook until softened, about 5 minutes.
  2. Stir in flour and cook for 1 minute. Gradually whisk in chicken broth until smooth.
  3. Add potatoes, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until potatoes are tender.
  4. Using an immersion blender, carefully blend the soup until smooth. Alternatively, you can transfer the soup to a regular blender in batches.
  5. Stir in milk and heavy cream. Heat through, but do not boil.
  6. Taste and adjust seasoning as needed.
  7. Serve hot with your favorite toppings.

Notes

For a richer flavor, use whole milk instead of milk. You can also add a clove of garlic to the onions for extra flavor.
