Hearty One-Pot Stuffed Pepper Soup

  • 1 pound ground beef
  • 1 large onion, chopped
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can tomato sauce
  • 4 cups beef broth
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 cup cooked rice
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, chopped green onions

Instructions

  1. In a large pot or Dutch oven, brown the ground beef over medium-high heat. Drain off any excess grease.
  2. Add the onion and bell peppers to the pot and cook until softened, about 5-7 minutes.
  3. Stir in the garlic, crushed tomatoes, tomato sauce, beef broth, oregano, basil, and red pepper flakes (if using). Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the flavors have melded.
  4. Stir in the cooked rice and simmer for another 5 minutes, or until heated through.
  5. Season with salt and pepper to taste.
  6. Serve hot, topped with shredded cheese, sour cream, and chopped green onions, if desired.

Notes

For a vegetarian option, substitute the ground beef with lentils or crumbled plant-based meat. You can also use different colored bell peppers for added visual appeal.
