  • 1 pound ground beef
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 1 (15-ounce) can kidney beans, rinsed and drained
  • 1 (15-ounce) can pinto beans, rinsed and drained
  • 1 (14.5-ounce) can diced tomatoes, undrained
  • 1 (15-ounce) can tomato sauce
  • 1 cup beef broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon oregano
  • Salt and pepper to taste
  • Optional: Cornbread for serving

Instructions

  1. In a large pot or Dutch oven, brown the ground beef over medium-high heat. Drain off any excess grease.
  2. Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
  3. Stir in the chopped green bell pepper, kidney beans, pinto beans, diced tomatoes, tomato sauce, beef broth, chili powder, cumin, and oregano.
  4. Bring the stew to a simmer, then reduce heat to low, cover, and cook for at least 30 minutes, or up to an hour, stirring occasionally. This allows the flavors to meld together.
  5. Season with salt and pepper to taste.
  6. Serve hot, optionally with a side of cornbread.

Notes

For a richer flavor, add a tablespoon of Worcestershire sauce while simmering. You can also top with shredded cheese or a dollop of sour cream before serving.
