This creamy Mushroom Stroganoff is a comforting and flavorful vegetarian dish, perfect for a weeknight dinner. Serve it over egg noodles or rice for a satisfying meal.

  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 pound mixed mushrooms, sliced
  • 1/2 teaspoon dried thyme
  • 1/4 cup dry sherry (optional)
  • 1 cup vegetable broth
  • 1/2 cup sour cream
  • 2 tablespoons chopped fresh parsley
  • Salt and pepper to taste
  • Egg noodles or rice, for serving

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes. Add the garlic and cook for 1 minute more.
  2. Add the mushrooms and thyme to the skillet and cook until the mushrooms are softened and browned, about 8-10 minutes.
  3. If using, pour in the sherry and cook for 1 minute, scraping up any browned bits from the bottom of the pan.
  4. Pour in the vegetable broth and bring to a simmer. Cook for 5 minutes, or until the sauce has thickened slightly.
  5. Remove the skillet from the heat and stir in the sour cream and parsley. Season with salt and pepper to taste.
  6. Serve the mushroom stroganoff over egg noodles or rice.

Notes

For a richer flavor, use beef broth instead of vegetable broth. You can also add a dollop of sour cream and a sprinkle of fresh parsley on top of each serving.
