  • 4 boneless, skinless chicken breasts
  • 2 large sweet potatoes, peeled and cubed
  • 2 tablespoons olive oil
  • 1/4 cup maple syrup
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • Optional: Chopped parsley for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss sweet potatoes with 1 tablespoon olive oil, salt, and pepper. Spread in a single layer on a baking sheet.
  3. In a small bowl, whisk together maple syrup, Dijon mustard, apple cider vinegar, garlic powder, and smoked paprika.
  4. Season chicken breasts with salt and pepper.
  5. Heat the remaining 1 tablespoon olive oil in a large skillet over medium-high heat. Sear chicken breasts for 2-3 minutes per side, until lightly browned.
  6. Place the seared chicken breasts on top of the sweet potatoes on the baking sheet.
  7. Brush the chicken and sweet potatoes with the maple glaze.
  8. Bake for 20-25 minutes, or until chicken is cooked through and sweet potatoes are tender, basting with glaze halfway through.
  9. Garnish with chopped parsley (optional) and serve.

Notes

For extra flavor, add a pinch of red pepper flakes to the maple glaze. Serve with a side of steamed green beans or broccoli.
