This Loaded Hamburger Soup is a hearty and flavorful one-pot meal packed with ground beef, vegetables, and cheesy goodness. It’s a comforting and easy dinner that’s perfect for chilly evenings.

  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 (15 ounce) can tomato sauce
  • 4 cups beef broth
  • 1 cup frozen mixed vegetables
  • 1 cup diced potatoes
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese, for topping
  • Sour cream, for topping (optional)
  • Chopped green onions, for topping (optional)

Instructions

  1. In a large pot or Dutch oven, brown ground beef over medium-high heat. Drain off any excess grease.
  2. Add the chopped onion and minced garlic to the pot and cook until softened, about 3-5 minutes.
  3. Stir in the diced tomatoes, tomato sauce, beef broth, mixed vegetables, and diced potatoes.
  4. Season with Italian seasoning, salt, and pepper.
  5. Bring the soup to a boil, then reduce heat and simmer for 15-20 minutes, or until the potatoes are tender.
  6. Ladle the soup into bowls and top with shredded cheddar cheese, sour cream, and green onions, if desired.
  7. Serve immediately.

Notes

For an extra creamy soup, stir in a dollop of cream cheese or sour cream at the end of cooking. You can also add other vegetables like corn, green beans, or zucchini.
