This creamy Loaded Baked Potato Soup captures all the flavors of your favorite loaded baked potato in a comforting and hearty soup. Topped with crispy bacon, cheddar cheese, and green onions, it’s the perfect cozy meal.

  • 4 large russet potatoes, baked
  • 4 cups chicken broth
  • 1 cup milk
  • 1/2 cup sour cream
  • 4 slices bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped green onions
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • Salt and pepper to taste

Instructions

  1. Bake the potatoes until soft. Let cool slightly, then scoop out the insides, reserving the skins for another use.
  2. In a large pot, melt the butter over medium heat. Whisk in the flour and cook for 1 minute to create a roux.
  3. Gradually whisk in the chicken broth until smooth. Bring to a simmer.
  4. Add the scooped-out potato flesh to the pot. Mash some of the potatoes with a potato masher or the back of a spoon to thicken the soup.
  5. Stir in the milk and sour cream. Season with salt and pepper to taste.
  6. Heat through, but do not boil.
  7. Ladle the soup into bowls and top with crumbled bacon, shredded cheddar cheese, and green onions.
  8. Serve immediately.

Notes

For a smoother soup, use an immersion blender to blend a portion of the soup before adding the toppings. You can also add a dollop of extra sour cream on top for added richness.
