  • 1/2 cup (56g) almond flour
  • 1/4 cup (28g) unsweetened cocoa powder
  • 1/4 cup (50g) erythritol or monk fruit sweetener
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/4 cup (57g) unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/4 cup (40g) sugar-free chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on two sides.
  2. In a medium bowl, whisk together almond flour, cocoa powder, erythritol, baking powder, and salt.
  3. In a separate bowl, whisk together eggs, melted butter, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.
  5. Fold in sugar-free chocolate chips, if using.
  6. Pour the batter into the prepared baking pan and spread evenly.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out with moist crumbs attached.
  8. Let cool completely in the pan before lifting out using the parchment paper overhang.
  9. Cut into squares and serve.

Notes

For a richer flavor, try adding a tablespoon of espresso powder to the dry ingredients. Serve with a dollop of whipped cream or a scoop of keto-friendly ice cream.
