Bowl of Creamy Jalapeno Popper Soup

This creamy Jalapeno Popper Soup brings all the flavors of your favorite appetizer into a comforting and satisfying bowl. Loaded with cheesy goodness, spicy jalapenos, and smoky bacon, it’s a guaranteed crowd-pleaser.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 jalapenos, seeded and minced
  • 4 slices bacon, cooked and crumbled
  • 4 cups chicken broth
  • 8 ounces cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • Salt and pepper to taste
  • Optional toppings: chopped green onions, extra bacon, tortilla chips

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and jalapenos and cook for 1 minute more.
  2. Stir in bacon and chicken broth. Bring to a simmer.
  3. Reduce heat and stir in cream cheese until melted and smooth.
  4. Stir in cheddar cheese until melted.
  5. Add milk and season with salt and pepper to taste.
  6. Simmer for 10 minutes to allow flavors to meld.
  7. Serve hot, topped with your favorite toppings.

Notes

For a smoother soup, use an immersion blender to blend until desired consistency is reached. Garnish with extra bacon, chopped green onions, or a dollop of sour cream.
