Enjoy a hearty and flavorful Zuppa Toscana Soup made quickly and easily in your Instant Pot. This creamy soup is packed with Italian sausage, kale, and potatoes for a satisfying and comforting meal.

Ingredients

  • 1 pound Italian sausage, removed from casing
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 4 medium potatoes, peeled and diced
  • 1 bunch kale, chopped
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Red pepper flakes (optional)

Instructions

  1. Set the Instant Pot to sauté mode. Add the Italian sausage and cook, breaking it up with a spoon, until browned. Drain any excess grease.
  2. Add the onion and garlic to the Instant Pot and cook until softened, about 3-5 minutes.
  3. Pour in the chicken broth and add the diced potatoes.
  4. Seal the Instant Pot lid and cook on high pressure for 8 minutes. Allow for a natural pressure release for 10 minutes, then manually release any remaining pressure.
  5. Carefully open the Instant Pot and stir in the kale. Cook until the kale is wilted, about 2-3 minutes.
  6. Stir in the heavy cream. Season with salt, pepper, and red pepper flakes (if using) to taste.
  7. Serve hot and enjoy!

Notes

For a spicier soup, use hot Italian sausage and add a pinch more red pepper flakes. You can also top with grated Parmesan cheese before serving.
