  • For the Cupcakes:
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 1 cup peeled and diced apples (Granny Smith or Honeycrisp)
  • 1 teaspoon ground cinnamon
  • For the Cinnamon Cream Cheese Frosting:
  • 8 ounces cream cheese, softened
  • 1/2 cup (1 stick) unsalted butter, softened
  • 3 cups powdered sugar
  • 2 teaspoons ground cinnamon
  • 1 teaspoon vanilla extract
  • 2-4 tablespoons milk (to adjust consistency)

Instructions

  1. Make the Cupcakes: Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla extract.
  4. In a small bowl, combine buttermilk and cinnamon.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk mixture, beginning and ending with the dry ingredients. Mix until just combined.
  6. Gently fold in the diced apples.
  7. Fill each cupcake liner about 2/3 full.
  8. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let cupcakes cool in the muffin tin for 5 minutes, then transfer to a wire rack to cool completely.
  10. Make the Cinnamon Cream Cheese Frosting: In a large bowl, beat together cream cheese and butter until smooth and creamy.
  11. Gradually add powdered sugar and cinnamon, beating until smooth.
  12. Stir in vanilla extract. Add milk, 1 tablespoon at a time, until desired consistency is reached.
  13. Frost the Cupcakes: Once the cupcakes are completely cooled, frost with the cinnamon cream cheese frosting.
