This Greek Green Peas Stew, or Arakas, is a healthy and flavorful dish simmered in a tomato-based sauce with fresh herbs. It’s a comforting and satisfying vegetarian meal that’s perfect for any day of the week.

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 cup vegetable broth
  • 1 pound frozen green peas
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh dill
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 tablespoon lemon juice

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  2. Stir in diced tomatoes, vegetable broth, green peas, parsley, dill, oregano, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until peas are tender.
  3. Stir in lemon juice just before serving.
