  • 1.5 lbs boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 2 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Lemon wedges, for serving (optional)

Instructions

  1. In a medium bowl, whisk together olive oil, lemon juice, garlic, oregano, basil, thyme, salt, and pepper.
  2. Place chicken breasts in a resealable plastic bag or shallow dish. Pour marinade over chicken, ensuring it’s evenly coated.
  3. Marinate in the refrigerator for at least 30 minutes, or up to 4 hours.
  4. Preheat grill or skillet to medium-high heat.
  5. Remove chicken from marinade and discard marinade.
  6. Grill or pan-fry chicken for 6-8 minutes per side, or until cooked through and internal temperature reaches 165°F (74°C).
  7. Let chicken rest for 5 minutes before slicing and serving.
  8. Serve with lemon wedges, if desired.
