Ginger Honey Soy Meatballs Over Jasmine Rice with an Asian Jalapeño Salad

For the Meatballs:
* 1 1/3 pounds ground turkey or ground pork
* 1 c. panko breadcrumbs
* 1/2 t. pepper
* 1/8 t. garlic powder
* 1/4 t. salt
* 1/8 t. ground ginger, or 1/4 t. fresh grated ginger
* 1 egg
* 1/8 t. dried parsley
* 1 T. soy sauce
* 3 T. vegetable oil

* scallions, sliced into 1/8 inch discs
* sesame seeds, for garnish

For the Rice:
* 4 c. cooked Jasmine rice, prepared according to package directions

For the Salad:
* 1 head romaine, shredded
* 1/8 large red onion, sliced thin
* 1/4 cucumber, English or local, sliced into 1/4 inch pieces
* 1 jalapeño, sliced into 1/4 inch discs, or halved with membrane and seeds removed to minimize spiciness
* 1/8 c. vegetable oil
* 1 t. sesame oil
* 1/3 c. rice wine vinegar
* 1/2 t. salt
* 1/2 t. pepper

For the Ginger Honey Soy Sauce:
* 1 T. vegetable oil
* 1/4 c. brown sugar
* 2/3 c. water
* 1/2 c. soy sauce
* 1 clove garlic, crushed
* 1 T. fresh ginger, grated
* 1/2 t. pepper
* 2 T. honey
* 1/3 c. rice wine vinegar
* 2 T. cornstarch
* 1 T. sesame oil

Directions:
1. Make the meatballs; combine all of the meatball ingredients, except for the oil, sesame seeds, and scallions in a bowl. Mix well.
2. Form the meat mixture into 2 inch size balls.
3. Pour oil into a large pan over medium high heat.
4. Once the oil is shimmering, add in the meatballs. Cover the pan.
5. Every 5 minutes, shake the pan so the meatballs can cook evenly. Do this for 20 minutes. Set the meatballs aside.

6. Make the salad; combine the lettuce, red onion, cucumber, and jalapenos in a medium sized bowl. Toss.
7. Combine and whisk the other salad ingredients in a mixing bowl.
8. Pour over the salad mixture.

9. Make the sauce; place the vegetable oil in a pan over medium heat. Add the garlic, ginger, brown sugar, soy sauce, and water. Stir until the brown sugar is dissolved.
10. Add in the honey, pepper, and rice wine vinegar. Stir.
11. Whisk in the cornstarch slowly, as to not get clumps. Add in sesame oil. Let simmer for 3 minutes. Add in the meatballs and glaze them with the sauce. Let cook until meatballs are hot.

12. Plate the rice, top with the meatballs and sauce, and place the salad on the side. Top with scallions and sesame seeds if desired.
