  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 3/4 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups shredded zucchini, excess moisture squeezed out
  • For the Frosting:
  • 4 tablespoons (1/2 cup) unsalted butter, softened
  • 2 cups powdered sugar
  • 2-3 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, cloves, and salt.
  3. In a separate bowl, combine the granulated sugar, brown sugar, and vegetable oil. Beat until well combined.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the shredded zucchini.
  7. Pour the batter into the prepared baking pan and spread evenly.
  8. Bake for 25-30 minutes, or until a wooden skewer inserted into the center comes out clean.
  9. Let the bars cool completely in the pan before frosting.
  10. To make the frosting: In a medium bowl, beat the softened butter until smooth and creamy.
  11. Gradually add the powdered sugar, beating until well combined.
  12. Add the milk, one tablespoon at a time, until the frosting reaches your desired consistency.
  13. Stir in the vanilla extract.
  14. Spread the frosting evenly over the cooled zucchini bars.
  15. Cut into bars and serve.

Notes

For extra flavor, add 1/2 cup of chopped walnuts or pecans to the batter.
