Ingredients

Scale
  • 5 lbs Yukon Gold potatoes, peeled and cubed
  • 1 medium yellow onion, chopped
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon cayenne pepper (optional)
  • 8 oz cream cheese, softened
  • 1 cup milk or half-and-half
  • Optional toppings: shredded cheddar cheese, cooked bacon, sour cream, green onions

Instructions

  1. Place the potatoes, onion, garlic, chicken broth, salt, pepper, thyme, and cayenne pepper (if using) in a 6-quart or larger slow cooker.
  2. Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until the potatoes are very tender.
  3. Use an immersion blender to blend the soup until smooth. Alternatively, carefully transfer the soup to a regular blender in batches and blend until smooth.
  4. Stir in the softened cream cheese and milk (or half-and-half) until well combined and smooth.
  5. Serve hot with your favorite toppings, such as shredded cheddar cheese, cooked bacon, sour cream, and green onions.

Notes

For a richer flavor, try using bone broth instead of chicken broth. You can also add cooked ham or sausage for extra protein.
