  • 1 pound Italian sausage, removed from casings
  • 1 medium sweet potato, peeled and diced
  • 1 yellow onion, chopped
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 1 (9 ounce) package refrigerated cheese tortellini
  • 5 ounces fresh spinach
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese, plus more for garnish
  • 1 teaspoon dried Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add sausage and cook, breaking it up with a spoon, until browned. Remove sausage from the pot and set aside.
  2. Add sweet potato and onion to the pot and cook until softened, about 5-7 minutes. Add garlic and cook for 1 minute more.
  3. Pour in chicken broth and bring to a boil. Add tortellini and cook according to package directions, about 3-5 minutes.
  4. Stir in spinach and cook until wilted, about 1-2 minutes.
  5. Return sausage to the pot. Stir in heavy cream, Parmesan cheese, and Italian seasoning. Season with salt and pepper to taste.
  6. Simmer for a few minutes to allow flavors to meld.
  7. Serve hot, garnished with additional Parmesan cheese, if desired.

Notes

For a spicier soup, use hot Italian sausage. You can also add other vegetables like carrots or celery.
