Ingredients

Scale
  • 1 pound fettuccine pasta
  • 1.5 pounds boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese, plus more for serving
  • 1/4 cup butter
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions

  1. Cook the fettuccine pasta according to package directions. Drain and set aside.

  3. Add the butter and garlic to the skillet and cook for 1 minute, or until fragrant. Pour in the heavy cream and bring to a simmer.
  4. Reduce heat to low and stir in the Parmesan cheese until melted and smooth. Season with salt and pepper to taste.
  5. Add the cooked pasta and chicken to the sauce. Toss to coat.
  6. Garnish with fresh parsley and extra Parmesan cheese. Serve immediately.

Notes

For an extra creamy sauce, add a tablespoon of cream cheese along with the Parmesan cheese.
