2 tablespoons melted butter or coconut oil
2 tablespoons granulated sugar
1 teaspoon ground cinnamon

Instructions
Preheat oven to 300°F (150°C).
In a medium bowl, toss the pumpkin seeds with the melted butter or coconut oil.
In a separate small bowl, combine the sugar, cinnamon, and salt.
Sprinkle the cinnamon sugar mixture over the pumpkin seeds and toss to coat evenly.
Spread the pumpkin seeds in a single layer on a baking sheet lined with parchment paper.
Bake for 45-60 minutes, or until golden brown and crispy, stirring every 15 minutes to prevent burning.
