  • 2 tablespoons melted butter or coconut oil
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 300°F (150°C).
  2. In a medium bowl, toss the pumpkin seeds with the melted butter or coconut oil.
  3. In a separate small bowl, combine the sugar, cinnamon, and salt.
  4. Sprinkle the cinnamon sugar mixture over the pumpkin seeds and toss to coat evenly.
  5. Spread the pumpkin seeds in a single layer on a baking sheet lined with parchment paper.
  6. Bake for 45-60 minutes, or until golden brown and crispy, stirring every 15 minutes to prevent burning.
  7. Let cool completely before serving.
