  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon soy sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon vegetable oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 1 cup broccoli florets
  • 1/2 cup sliced carrots
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1/4 teaspoon red pepper flakes (optional)
  • Cooked rice, for serving
  • Sesame seeds, for garnish

Instructions

  1. In a bowl, combine chicken, 1 tablespoon soy sauce, and cornstarch. Toss to coat.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat.
  3. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  4. Add bell peppers, onion, broccoli, and carrots to the skillet and cook until tender-crisp, about 5-7 minutes.
  5. Add garlic and ginger to the skillet and cook for 1 minute more.
  6. In a small bowl, whisk together 2 tablespoons soy sauce, honey, rice vinegar, sesame oil, and red pepper flakes (if using).
  7. Pour sauce over vegetables and bring to a simmer, cooking until sauce thickens slightly, about 1-2 minutes.
  8. Return chicken to the skillet and toss to coat with the sauce.
  9. Serve immediately over cooked rice, garnished with sesame seeds.
