Chicken Noodle Soup Bowl

This classic chicken noodle soup is a comforting and nourishing meal, perfect for a chilly day or when you’re feeling under the weather. It’s packed with tender chicken, vegetables, and noodles in a flavorful broth.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 8 cups chicken broth
  • 1 pound boneless, skinless chicken breasts
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • Salt and pepper to taste
  • 8 ounces egg noodles
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, carrots, and celery and cook until softened, about 5-7 minutes.
  2. Add garlic and cook for 1 minute more.
  3. Pour in chicken broth and bring to a boil.
  4. Add chicken breasts, thyme, rosemary, salt, and pepper. Reduce heat and simmer for 20-25 minutes, or until chicken is cooked through.
  5. Remove chicken from the pot and shred with two forks.
  6. Return shredded chicken to the pot.
  7. Add egg noodles and cook according to package directions, usually about 8-10 minutes.
  8. Stir in fresh parsley.
  9. Serve hot.

Notes

For a richer flavor, use homemade chicken broth. You can also add other vegetables like zucchini or peas.
