Delicious Homemade Chicken Fried Rice

This Chicken Fried Rice is a quick and easy one-pan meal, perfect for a weeknight dinner. Packed with tender chicken, fluffy rice, and colorful vegetables, it’s a flavorful and satisfying dish.

  • 1 tablespoon vegetable oil
  • 1 pound boneless, skinless chicken breasts, cut into small cubes
  • 1 teaspoon sesame oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 3 cups cooked rice, preferably day-old
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 teaspoon rice vinegar
  • 2 eggs, beaten
  • Salt and pepper to taste
  • Chopped green onions, for garnish

Instructions

  1. Heat vegetable oil in a large skillet or wok over medium-high heat. Add chicken and cook until browned and cooked through. Remove chicken from skillet and set aside.
  2. Add sesame oil to the skillet, then add onion and garlic. Cook until softened, about 2-3 minutes.
  3. Add mixed vegetables and cook for another 2-3 minutes.
  4. Push the vegetables to one side of the skillet. Pour beaten eggs onto the empty side and scramble until cooked.
  5. Add cooked rice to the skillet and break it up with a spatula.
  6. Add soy sauce, oyster sauce (if using), and rice vinegar. Stir to combine.
  7. Add the cooked chicken back to the skillet and mix everything together.
  8. Season with salt and pepper to taste.
  9. Garnish with chopped green onions before serving.

Notes

For extra flavor, add a dash of sriracha or red pepper flakes. Feel free to substitute the chicken with shrimp, pork, or tofu.
