  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 8 cups chicken broth
  • 1 pound boneless, skinless chicken breasts, cubed
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/4 teaspoon black pepper
  • 1 cup all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 2 tablespoons butter, melted
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, carrots, and celery and cook until softened, about 5-7 minutes. Add garlic and cook for 1 minute more.
  2. Pour in chicken broth and bring to a boil. Add cubed chicken, thyme, rosemary, and pepper. Reduce heat and simmer for 15 minutes, or until chicken is cooked through.
  3. While the chicken is simmering, prepare the dumplings. In a medium bowl, whisk together flour, baking powder, and salt. Stir in milk and melted butter until just combined. Do not overmix.
  4. Drop spoonfuls of dumpling batter into the simmering soup. Cover and cook for 15-20 minutes, or until dumplings are cooked through and fluffy.
  5. Garnish with fresh parsley before serving.

Notes

For a richer flavor, use homemade chicken broth. You can also add other vegetables like potatoes or peas to the soup.
