These Cheesy Stuffed Chicken Rolls with Caramelized Onions are a delicious and easy weeknight dinner. Tender chicken breasts are filled with a creamy cheese mixture and sweet caramelized onions, then baked to golden perfection.

  • 4 boneless, skinless chicken breasts
  • 1 large onion, thinly sliced
  • 2 tablespoons olive oil, divided
  • 4 ounces cream cheese, softened
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onion and cook, stirring occasionally, until caramelized, about 20-25 minutes. Set aside.
  3. While the onions are caramelizing, prepare the chicken. Place each chicken breast between two sheets of plastic wrap and pound to 1/4-inch thickness.
  4. In a medium bowl, combine the softened cream cheese, mozzarella cheese, Parmesan cheese, parsley, garlic powder, salt, and pepper.
  5. Spread the cheese mixture evenly over each chicken breast. Top with caramelized onions.
  6. Roll up each chicken breast tightly and secure with toothpicks.
  7. Heat the remaining 1 tablespoon of olive oil in the same skillet over medium heat. Sear the chicken rolls on all sides until lightly browned.
  8. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the juices run clear.
  9. Remove from oven and let rest for 5 minutes before serving. Remove toothpicks before serving.

Notes

Serve with a side of roasted vegetables or a fresh salad for a complete meal. You can also add a pinch of red pepper flakes to the cheese mixture for a little heat.
