This hearty Cheeseburger Soup captures all the classic flavors of a juicy cheeseburger in a comforting, creamy soup. It’s a family-friendly meal that’s quick to make and perfect for a chilly evening.

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (4 ounce) can diced green chilies, undrained
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cups cubed potatoes (about 2 medium potatoes)
  • 1 cup shredded cheddar cheese, plus more for topping
  • 1 cup milk or half-and-half
  • Optional toppings: cooked bacon, sour cream, green onions

Instructions

  1. In a large pot or Dutch oven, brown the ground beef over medium-high heat. Drain off any excess grease.
  2. Add the chopped onion and minced garlic to the pot and cook until softened, about 5 minutes.
  3. Pour in the beef broth, diced tomatoes (undrained), and diced green chilies (undrained). Stir in the Worcestershire sauce, salt, and pepper.
  4. Add the cubed potatoes to the pot. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the potatoes are tender.
  5. Stir in the shredded cheddar cheese until melted and smooth.
  6. Pour in the milk or half-and-half and heat through, but do not boil.
  7. Serve hot, topped with additional shredded cheddar cheese and optional toppings like cooked bacon, sour cream, or green onions.

Notes

For a richer flavor, use a combination of cheddar and Monterey Jack cheese. You can also add a splash of hot sauce for a little kick.
