This Cheddar Bay Philly Cheese Steak Cobbler combines the best of both worlds! Flaky cheddar bay biscuits top a savory and cheesy Philly cheesesteak filling for a comforting and unique twist on a classic.

  • 1 tablespoon olive oil
  • 1 large onion, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 pound thinly sliced steak (such as ribeye or sirloin)
  • Salt and pepper to taste
  • 8 ounces sliced provolone cheese
  • For the Cheddar Bay Biscuit Topping:
  • 1 ½ cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¼ cup cold unsalted butter, cut into small cubes
  • ¾ cup shredded cheddar cheese
  • ¾ cup buttermilk
  • 2 tablespoons melted butter
  • 1 teaspoon garlic powder
  • ¼ teaspoon dried parsley

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium-high heat. Add onion and bell peppers and cook until softened, about 5-7 minutes.
  3. Add steak to the skillet and cook until browned, about 3-5 minutes. Season with salt and pepper to taste.
  4. Remove skillet from heat and top with provolone cheese.
  5. In a large bowl, whisk together flour, baking powder, baking soda, and salt.
  6. Cut in cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  7. Stir in cheddar cheese.
  8. Add buttermilk and stir until just combined. Do not overmix.
  9. Drop spoonfuls of biscuit dough over the steak and cheese mixture in the skillet.
  10. Bake for 20-25 minutes, or until biscuits are golden brown and cooked through.
  11. While the cobbler is baking, melt 2 tablespoons of butter and stir in garlic powder and dried parsley.
  12. Brush the melted garlic butter over the baked biscuits.
  13. Let cool slightly before serving.

Notes

For a spicier kick, add a pinch of red pepper flakes to the cheesesteak filling. Serve with a side salad or your favorite steakhouse sides.
