Cajun Potato Soup Recipe

A steaming bowl of Cajun Potato Soup

Warm up with this creamy and flavorful Cajun Potato Soup! Loaded with potatoes, vegetables, and Cajun spices, this soup is sure to satisfy your cravings.

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 celery stalks, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1.5 pounds Yukon gold potatoes, peeled and cubed
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/2 cup heavy cream
  • 2 green onions, sliced, for garnish
  • Cooked bacon crumbles, for garnish (optional)
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, celery, and bell pepper and cook until softened, about 5-7 minutes.
  2. Add garlic and cook for 1 minute more.
  3. Pour in chicken broth and add potatoes, Cajun seasoning, smoked paprika, and cayenne pepper (if using). Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until potatoes are tender.
  4. Use an immersion blender to partially blend the soup until creamy, or carefully transfer half of the soup to a regular blender and blend until smooth. Return to the pot.
  5. Stir in heavy cream and heat through. Season with salt and pepper to taste.
  6. Serve hot, garnished with green onions and bacon crumbles, if desired.

Notes

For a spicier soup, add more cayenne pepper or a dash of hot sauce. You can also substitute vegetable broth for chicken broth to make it vegetarian.
