  • 1 pound Italian sausage, removed from casings
  • 1 tablespoon olive oil
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream
  • 1/4 cup grated Parmesan cheese, plus more for serving
  • 1/4 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
  • Fresh sage leaves, for garnish (optional)

Instructions

  1. Cook the sausage: In a large skillet over medium heat, brown the Italian sausage, breaking it up with a spoon as it cooks. Cook until fully cooked and no longer pink, about 8-10 minutes. Remove sausage from the skillet and set aside.
  2. Sauté aromatics: Add olive oil to the same skillet. Add the chopped onion and cook until softened, about 3-5 minutes. Add the minced garlic and cook for another minute until fragrant.
  3. Make the sauce: Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet. Stir in the heavy cream and Parmesan cheese. Season with salt and pepper to taste.
  4. Cook the gnocchi: While the sauce simmers, cook the butternut squash gnocchi according to package directions. Usually, this involves boiling them in salted water until they float to the surface (about 2-3 minutes).
  5. Combine and serve: Drain the gnocchi and add them to the skillet with the sauce. Add the cooked sausage back to the skillet and toss everything together to coat.
  6. Serve immediately: Garnish with fresh sage leaves (optional) and extra grated Parmesan cheese.

Notes
