  • 1 teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • ½ teaspoon salt
  • ½ cup (1 stick) unsalted butter, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup mashed ripe bananas (about 2-3 bananas)
  • 1 cup grated carrots
  • ½ cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg, cloves, and salt.
  3. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, mash the ripe bananas.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the mashed bananas, beginning and ending with the dry ingredients. Mix until just combined.
  6. Stir in the grated carrots and nuts (if using).
  7. Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
  8. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  9. Prepare the cream cheese frosting: In a medium bowl, beat together 4 ounces softened cream cheese and ¼ cup softened unsalted butter until smooth. Gradually beat in 2 cups powdered sugar until light and fluffy. Stir in ½ teaspoon vanilla extract.
  10. Once the bread is completely cooled, frost with the cream cheese frosting.

Notes

For a richer flavor, toast the walnuts or pecans before adding them to the batter. You can also add raisins or chocolate chips to the bread.
