There’s a crazy easy recipe that is a go to when I just don’t have the energy to think about what to make. I see ground turkey in the fridge and I think; “Too tired. Definitely not winning any wife of the year award tonight. I’ll just make my quick “empanadas”.
There are literally 5 ingredients: packaged crescents, ground turkey, taco seasoning, shredded Mexican cheese, and salsa.
So, one night, this was my exact thought process. I was about 7-8 months pregnant, working full time, commuting over 2 hours a day, and I was EXHAUSTED, to say the least. I took out everything I needed, cooked the meat in oil, added taco seasoning, drained some fat, added the salsa, flattened the dough and filled the pockets. Into the oven they went. I breathed a sigh of relief as I plopped down on the couch. I was relieved that dinner was cooked and would be ready in 20 minutes. Then, I opened my eyes and looked into the kitchen (from the couch) and saw the whole bag shredded Mexican cheese sitting on the counter, unopened…
I freakin forgot to mix the cheese into the “empanadas”!!! Like, really?!?!
I told Zach what I did and we blamed it on pregnancy brain… I’m also super forgetful because I’m usually doing 1,368 things at once, but that’s neither here nor there.
So, what do I do? I get up from our comfy couch, that totally could have swallowed me at that moment because I was so tired, and I returned to the kitchen. It’s just the two of us now as the world begins to fade all around… just me and that unopened bag of cheese, mocking me with its unopenedness as the oven timer got closer and closer to that zero.
Then it hit me… queso sauce! Awesome!
A super quick and easy queso sauce that complimented our “empanadas” perfectly. Dinner was saved!
